Thomas O'Connor

Biography

Tom O'Connor was an undergraduate student in UCC from 1976 -1980 graduating with a First Class Honours BSc (Dairying).  He received funding from the Kellogg Foundation to commence a PhD in the Division of Nutritional Sciences at Cornell University in 1980.  Tom finished his PhD in 1984 and spent further time as a Postdoctoral Researcher at Cornell before working for a major multinational company in the US and Belgium.  Tom returned to a College Lectureship in UCC in 1989.  He was later promoted to Senior Lecturer.  Tom teaches extensively in both the Nutritional Sciences and Food Science areas. He was awarded a President's Award for Teaching Excellence in 2003.  Tom's principal interests are in human nutrition in the developing world, food toxicology, and food composition and quality.
