Biography
Professor Paul McSweeney is Vice-President for Learning and Teaching in University College Cork, Ireland (UCC). His office coordinates the activities of the University’s Centre for the Integration of Research, Teaching and Learning (CIRTL), Adult Continuing Education (ACE), Centre for Digital Education, Skills Centre, Examinations Appeals, Careers' Service and the university's Library system and Cork University Press, together with responsibility for delivering aspects of the University’s Academic Strategy and strategic plan.
Professor McSweeney holds a Personal Chair in Food Chemistry and has an active research profile in dairy chemistry and cheese science. He is an experienced lecturer and researcher and has successfully managed research projects funded through the Food Industry Research Measure and its predecessors administered by the Irish Department of Agriculture and Food, the EU Framework programmes, the US-Ireland Co-operative Programme in Agriculture/Food Science and Technology, Bioresearch Ireland and industry.
In UCC, Prof McSweeney is a member of University Leadership Team (ULT), Academic Board and chairs the Examinations Appeals Committee and the Institutional Review Group. He is also a member of the Student Experience, Teaching and Learning Committee of Ireland’s Higher Education Authority and the Royal Irish Academy.
Research Interests
Professor McSweeney's research interests include Dairy Biochemistry with particular reference to factors affecting cheese flavour and texture, including proteolysis during cheese maturation, the role of non-starter lactic acid bacteria and smear microorganisms, the ripening of hybrid and non-Cheddar varieties, the specificity of proteinases on the caseins, proteolysis and lipolysis in cheese during ripening and characterization of enzymes important to cheese ripening (proteinases, peptidases, amino acid catabolic enzymes), factors affecting texture development during ripening.
Prof McSweeney’s research career highlights include:
- Widely published: ca. 230 papers, reviews, book chapters, extended conference papers (but excluding abstracts); 18books.
- Highly cited with a H-index of 83 (Google Scholar); October 2025.
- Member of the editorial board of international journals and frequent referee
- Regular guest lecturer at universities abroad
- Recipient of the Marschall Danisco International Dairy Science Award of the American Dairy Science Association (2004).
- Awarded a higher doctorate (DSc) on published work by the National University of Ireland (2009).
Teaching Activities
Professor McSweeney teaches a range of courses in Food Chemistry and Food Technology, with particular emphasis on dairy chemistry and cheese science and technology.
