Defined-strain surface starters in tilsit cheese

Abstract

A method was investigated to smear young tilsit cheese using a defined-strain surface starter. Tilsit cheeses were smeared with a reference smear or defined-strain smear, Mix C or Mix D. Higher levels of free amino acids were found in cheeses smeared with Mix C and Mix D.
