Abstract

A review on the milk protein system and some technological aspects of functional milk proteins was presented. Membrane separation processes have become major unit operations in various sectors of the dairy industry. A number of latest methods such as cryoprecipitaion and ethanol precipitation, for the preparation of caseins are also being developed for industry applications.
