Abstract
This article highlights the large interspecies differences in the composition of milk and demonstrates the similarity between the milks of the equids. The gross composition, constituents (proteins, lipids, carbohydrates, vitamins, and minerals), and physical properties of equid milk, particularly equine milk, are summarized, and many of the chemical and physicochemical properties of equine and asinine milk are reported.
