Abstract

Genomics has greatly advanced modern biology and is relevant to many disciplines, including food microbiology. This article discusses the history, utility, and application of genomics for the study of Lactic Acid Bacteria that are relevant to the food and health industries. Whole genome sequencing, assembly and annotation approaches are discussed with particular focus on Lactobacillus genome projects.
