Abstract
The application of packaging systems and materials to food products is constantly evolving. Greater demands for food products, such as processed meats, possessing higher quality, greater safety and convenience continue to grow. Consequently, the packaging and processed meat industries have evolved, and continue to do so. In order to address these demands, this chapter summarises the different packaging systems and materials used to protect meat product quality and safety, while increasing the shelf-life of muscle-based cooked meats and muscle-based, convenience-style food products.
