Abstract
The development of food product ranges in the areas of convenience-style, ready-to-eat, ready-to-heat-and-serve and so on over the past 20 years has been significant. As product ranges have grown, each offering ever more convenience to the consumer, the demand for new processing and packaging technologies has had to keep pace, with some interesting developments having emerged. This chapter attempts to address these issues.
