Structure of casein micelles

Abstract

Casein micelle is a complex structure primarily composed of caseins and colloidal calcium phosphate. Casein micelles are responsible for unique physicochemical and functional properties of milk. Casein micelles are dynamic, spherical, open, and highly hydrated heterogeneous structures. Several models are proposed for casein micelle structure that fall into three general categories namely coat-core models, submicelle models, and internal structure models. The present chapter reviews proposed models of the casein micelle structure to date.
