Study of the Heart Rate Variability signal during Oral Food Challenges

Abstract

Along the last years, the analysis of the Heart Rate Variability (HRV) has been employed for many and varied applications, such as the analysis of the health status, control of several diseases or, even, as a tool for helping to the diagnosis of some illnesses. In this work, we analyse the HRV signal of children exposed to food allergies provocation tests, or Oral Food Challenges (OFC). With this study, it is aimed to find the optimal way of extracting information from the HRV related to the imminent appearance of physical symptoms.
