Abstract
The combination of 1H NMR fingerprinting of muscle lipids from fresh and processed (frozen, canned and smoked) Atlantic salmon (Salmo salar) with supervised multivariate analysis was applied to differentiate wild and farmed fish. Soft Independent Modelling of Class Analogy (SIMCA) allowed classification of samples according to the wild and farmed status with a 100% correct classification. The discrimination is mainly based on the higher content in oleic and linoleic acid in farmed fish.
